Ground Beef and Potato Casserole

1 lb ground beef
1 large onion, chopped
1 Tbsp butter
3 Tbsp all-purpose flour
1/2 cup beef broth
1/2 cup milk
1 can cream of mushroom soup
1/4 cup water
4 medium yellow potatoes, washed and cubed
2 cups cheddar cheese, shredded

  1. Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
  2. In a medium skillet, brown the ground beef and the onion. Drain and set aside.
  3. Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the flour. Slowly add in the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
